Western-style Chirashi Sushi
Ingredients *1cup = 200ml
|1 1/2 cups rice*
|1 cup water*
|1 Tablespoon vegetable broth
|3 Tablespoons Red Vinegar for Sushi and Vinegared Food
|1 Tablespoon roasted sesame seeds
|2 eggs, medium size
|1 Tablespoon oil
|Salt to taste
|30-40g smoked salmon
|Fresh lemon juice to taste

Rinse rice, add water and vegetable broth, and cook in a rice cooker.
Cut the cucumber into thin slices, sprinkle with a good amount of salt and set aside to soften, then squeeze out the water. Cut the avocado into small pieces and sprinkle with lemon juice. Cut the smoked salmon into bite-sized pieces. Heat oil in a skillet, add beaten eggs and a pinch of salt to make fine scrambled eggs.
After the rice is cooked, let it steam for a while. Sprinkle the Red Vinegar for Sushi and Vinegared Food over the rice, mix them together. Fan the rice to cool it down.
Add the roasted sesame seeds, place the rice flat in a large serving dish, beautifully arrange the ingredients from Step 2 on top, and sprinkle with fresh lemon juice to your liking.
Place the ingredients on top with good balance.
Makes approximately 2 servings. The Western-style Chirashi Sushi is also good for kids. The salted cucumber adds an accent to the texture. The gorgeous appearance is perfect for parties.
