At MIKURA Vinegary, we are committed to traditional wooden-barrel fermentation,
allowing nature’s power
and ample time to

their magic as we brew
our vinegar.
This
method—which relies on
wooden
barrels rather than
machinery—limits
the amount we can produce at any given
time, but above all, it nurtures healthy
acetic acid bacteria. Rather than simply producing vinegar as a condiment, we tend to our wooden barrels with the mindset that we are nurturing life itself.

Shop

At MIKURA Vinegar, a shop located in Taki Town’s VISON complex, there is an on-site brewery where you can watch the production process through a glass window. We also have droppers lined up next to each product so you can sample the vinegars. You’ll be surprised to discover just how many different flavors of vinegar there are. At the back of the shop, there’s a small café corner where you can enjoy soft-serve ice cream with vinegar or vinegar-based drinks.
